Lemon Beet Vegetarian Tacos

  1. Preheat oven to 425°F.
  2. Cut the sweet potatoes and brussel sprouts and toss lightly in olive oil.
  3. Bake for 30-35 minutes.
  4. Preheat oven to 400°F.
  5. Toss the purple carrots in olive oil and bake for 20 minutes.
  6. Place vegetables on each tortilla and add a tablespoon of hummus to each and enjoy!
