Lemon Garlic Shrimp Scampi

  • 10 oz Lemon Garlic Hummus
  • 1 lb. Linguini, Cooked (reserve 2 cups of pasta cooking water)
  • 16 oz Peeled & Deveined Shrimp
  • ½ cup Chopped Parsley
  • 2 tsp. Olive Oil
  • Salt and Pepper to taste
  • 1 small chunk of Parmesan Cheese


  1. Marinade shrimp in 2 tsp. of lemon garlic hummus
  2. In a large skillet heat 2 tsp. olive oil
  3. Sear shrimp on medium heat (approx.. 1 minute per side)
  4. Add 1 cup of reserved pasta water and all remaining hummus
  5. Add cooked pasta
  6. Stir until combined using remaining reserved pasta water to adjust consistency as necessary
  7. Season with salt and pepper
  8. Add chopped parsley
  9. Serve in bowls and top with shaved parmesan cheese
