Roasted Red Pepper Chicken Quesadilla

  • 2 Flour tortillas
  • 2 tbs. Roasted Red Pepper Hummus
  • ½ cup Shredded Rotisserie Chicken
  • ½ cup Cheddar or Mexican blend cheese
  • 2 tbs. Ghee or melted butter


  1. Heat a large shallow pan or skillet on the stovetop
  2. Brush both sides of the flour tortillas with ghee or melted butter
  3. Spread the hummus onto one side of one of the tortillas
  4. Top with chicken and cheese
  5. Place the other tortilla on top
  6. Transfer to pan and cook on medium heat for approximately 2-3 minutes per side
